Tiramisu Birthday Cake



Another comfort food recipe... Another cake!! A no bake one and who doesn't love that? 
I made this for my husband's birthday and it was a hit. It took me literally 15min from start to finish but the results were amazing. The hardest part is remembering to make it the night before so it has time to set in the fridge.

The recipe calls for mascarpone cheese but regular full fat cream cheese will work too. 

Also, when talking about tiramisu, ladyfingers would be the biscuits to go with but I thought chocolate chips were a great alternative. The chocolate chips gave the cake a really nice texture and flavour.

Serves 12

Ingredients:

- 450ml heavy cream
- 340g mascarpone cheese (cream cheese works too)
- 100g granulated sugar
- 1 heaped teaspoon instant coffee powder
- 2tbsp cocoa powder
- 1tsp vanilla extract
- 1 shot of Irish cream liqueur (optional)
- 400g chocolate chip cookies (any other cookies work)

Process:

- Put all of the ingredients (except the cookies) in a bowl of an electric mixer. Starting with low speed begin mixing them, then raise the speed until you have stiff peaks.
- Spread a few tablespoons of the cream in an 8-inch springform pan, then place the cookies on top, breaking some to fill the gaps. Keep going with the layers until you run out of ingredients finishing with cream. 
- Cover and leave in the fridge overnight to set. The next day run a knife around the outside of the cake and remove the sides. Decorate with chocolate sprinkles or berries and serve.
